TMM KITCHEN: Microwave Breakfast Quiche

I love breakfast food. I can eat breakfast food all day if I had my way. So you'll normally find me in the kitchen during breakfast compared to any other meal of the day. Except on weekdays when I have to go to the office.

The other day I made Quiches for breakfast. I would normally cook them in an oven, but my friend requested that I post more dishes that doesn't require an oven, so here it is! (You're welcome, Winky!) This is the second time I made this in a microwave, and it's actually easier.

You can buy silicone pans in department stores. I used to use these silicone molds for my soap making, but now I use them for making small cakes and sometimes, quiches. Since you can't put anything metal inside the microwave, it is ideal that you use microwave safe plastic or silicone molds. You can actually use a mug too!

INGREDIENTS (subtract or multiply the recipe depending on how many you want to make)

  • 3 large eggs
  • 1/4 cup full cream milk
  • 1 piece sliced ham, sliced into small squares
  • 2 red tomatoes, chopped
  • Half Green pepper, chopped
  • Half Red pepper, chopped
  • Half Small onion, chopped
  • Dash of Italian seasoning
  • Grated cheddar cheese (I use Eden)
  • Salt & Pepper to taste
COOKING INSTRUCTIONS

1. Put all your eggs and milk in a measuring cup with a spout. It will be easier to pour later. Add salt and pepper.

2. Beat the eggs and milk until well incorporated. Add a dash of Italian seasoning. Mix well until incorporated. Set aside.

3. Saute the onions, ham, green pepper and red pepper. Do not include the tomatoes. Set aside.


4. Butter your molds, and scoop the sauteed ingredients into each hole.

5. Add the chopped tomatoes.

6. Remove the microwave turntable and place your mold on top of it before you pour the egg mixture. Do not fill to the top! Remember to leave an ample amount of space from the top because when it's cooking, it will puff up a bit. Swirl it a bit to mix everything together.

7. Add grated cheddar cheese on top. I used Eden cheese!

8. Set your microwave on high, and microwave for 4 minutes. After 4 minutes, check if the egg is cooked, and just keep adding more time in 30 second intervals until the egg is done.

9. Let it sit for a minute or two for it to settle down a little bit.

10. Serve with toast and some hot sauce! Enoy!
