TMM Kitchen: French Toast

The night before I made this, I had a dream that I was devouring a tall stack of pancakes. I love pancakes, whether plain or with syrup it doesn't matter. When making pancakes at home, my favorite pancake mix is Maya's Quick n' Easy Pancakes. Aside from it being easy AF to make, it's hella good. Coz come on... Why make one from scratch when you can have one by just adding water.

But when I went down stairs to make the family a batch for breakfast, we ran out. I didn't have a choice to make some from scratch, but I didn't have any baking powder left in our pantry. Without it, the pancakes will be flat like crepes, and I didn't have that kind of strength in me for that kind of stress.

So I opted to make some french toast. Probably the next best thing to pancakes. It's not as easy as just adding water, but it's something you can make with ingredients that you most probably already have in your pantry.

I have been using this same recipe for years but don't make often.

INGREDIENTS (yield: makes 4 toasts)

  • 1/4 cup full cream milk
  • 1 tsp Vanilla extract (or 1/2 Vanilla Extract and 1/2 Almond Extract)
  • 1 large egg
  • Dash of Cinnamon powder
  • A whole-lotta salted butter
  • 4 pieces of white bread

COOKING INSTRUCTIONS

1. In a flat-bottomed bowl, combine the extracts and the egg and beat until well incorporated. You can use a whisk or a fork, doesn't matter. (note: you don't have to put almond extract, it's just that I love the smell of it. You can just use 1 full teaspoon of Vanilla extract)


2. Stir in the milk.


3. Add a dash of cinnamon -or you can skip this if you're not a fan.


4. Set your fire to low heat, add butter on your on-stick pan and spread the love. Be careful not to burn your butter.


5. Dip one side of the bread to the egg mix, and repeat on the other side. Be careful not to over soak the bread!


6. Shallow fry on the pan until golden brown on both sides.
In between shallow frying batches, if you find the butter already burnt, wipe your pan down with a paper towel, and add another slice of fresh butter.

7. Serve hot with maple syrup, pancake syrup, or honey!
